DATEM is an efficient emulsifier commonly used in baking.
Description
Diacetyl Tartaric Acid Ester of Mono- and Diglycerides aka DATEM is an ingredient used in a variety of baked products: crusty bread, yeast-fermented bread, biscuits, etc.
DATEM enhances the elasticity, toughness, and air holding capacity of the dough by building a strong gluten network; reduces the degree of softening of the dough, increases the volume of bread and buns, and improves the texture of the final products.
DATEM has preservative capabilities as well, it interacts with amylase to delay the aging of food.
It can be used in whipping creams, sugar, syrup, coffee whiteners, ice cream, salad dressings, and spices too.
