Description
Sodium benzoate is the sodium salt of Benzoic acid.
In food-grade applications, it is bacteriostatic and fungistatic under acidic conditions with a pH of less than 3.6. Sodium benzoate is most widely used in acidic foods such as salad dressings (vinegar), carbonated drinks (carbonic acid), jams and fruit juices (citric acid), pickles (vinegar), and condiments.
In addition, Sodium benzoate can be used in the pharmaceutical industry as an antifungal preservative. It is applied in skin products and other personal care products as well.
