Sodium Gluconate is the sodium salt of gluconic acid with a chelating property.
Description
Sodium gluconate acts as a stabilizer, a sequestrant, and a thickener when used as a food additive.
It is usually used in dairy products, processed fruit, vegetables, herbs and spices, cereals, processed meats, preserved fish, etc.
It is also non-toxic and easily biodegradable (98% after 2 days)
