Xanthan Gum (Food Grade)
Xanthan gum is a high molecular weight polysaccharide. Unlike other gums, it is very stable under a wide range of temperatures and pH.
Description
In the food industry, it is used as a salt/acid resistant food thickening agent (in salad dressings, sauces…). It also helps to prevent oil separation by stabilizing the emulsion, although it is not an emulsifier, and helps to create a pleasant texture in many ice creams. It is used to give the dough or batter a “stickiness” that would otherwise be achieved with the gluten.
